Stuffed Hot Peppers
12 fresh banana peppers
~1 lb ground hot sausage AND mild sausage
½ cup mozzarella cheese
½ bread crumbs
2 t. minced garlic
Tomato sauce of choice
1. Preheat your oven to 400°F if baking immediately
2. Prepare peppers wearing disposable gloves: cut tops of the peppers and remove any large pieces of the ribs and seeds.
3. In a bowl mix sausage, cheese, bread crumbs, and garlic.
Stuff each pepper using the meat mixture.
4. To freeze: place in single layer in freezer bag, close tightly and mark.
5. To eat immediately: coat a baking dish with sauce. Layer peppers close together and cover with additional sauce.
6. Cover baking dish tightly with foil. Bake 40 minutes and check. Be careful taking off the foil- steam will escape! Check with thermometer, internal temp. should be 165°F. If needed, bake another 5-10 minutes.
7. Top with additional cheese, if desired. Let cool about 5 minutes before serving.
