Doughnut recipe :
300g strong flour
15g fresh yeast
20 milk powder (will make the dough creamier and silkier)
2 eggs (room temperature)
40g butter
40g sugar
vanilla
a pinch of salt
± 110ml H2O (room temp)
Pastry Cream:
300g Milk
4 Egg yolks
50g Sugar
10g Plain flour
10g Cornflour (Starch)
Hazelnut Praline:
120g Roasted hazelnuts
10g Black sesame
10g White sesame
125g Caster sugar
30g Water
1g Sea salt
Whipped cream:
200g Double cream
25g Icing sugar
Vanilla
For the final filling:
Mix pastry cream with 100g Praliné + all whipped cream
