Ingredients:
Beef ribs - 2.2 lbs (1 kg)
Onions - 2 pcs.
Chili - 1 pc.
Celery - 2 pcs.
Salt to taste
Black pepper to taste
Honey - 1 tbsp.
Sour green apples - 2 pcs.
Garlic - 2 cloves
Thyme - 1-2 sprigs
Laurel leaf - 1 pc.
Water - 1.3 cups (300 ml)
Olive oil
Parsley for serving
Preparation:
Heat the olive oil in a saute pan.
Fry the ribs over high heat. Season with salt and pepper.
Cut the onions into half rings.
Turn the ribs over, salt and pepper the other side.
Chop celery finely.
Take out the ribs.
In the same saucepan fry onion and celery.
Cut the apples into slices, removing the core.
Remove the seeds from the chili and chop.
Cut the garlic into several pieces.
Season the onion and celery with a little salt and pepper.
Put the ribs on top.
Place apples, chili, garlic and honey on top of the ribs.
Fill with water.
Add bay leaf, thyme.
Cover with a lid, let boil, turn heat down to low and leave to stew for 2 hours.
After 2 hours, take the ribs out.
Strain the vegetables and strain a little through a sieve.
Return everything back to the roasting pan.
Evaporate the sauce until thickened over high heat.
Finely chop the parsley to serve.
