This looks wonderful! And aside from the olives, I can either grow or buy every ingredient locally, which is something I love to do. I just found your channel last week and I have been enjoying your videos so much! I love your approach, encouraging us to alter the recipes as we like (or based on what's on hand). I riffed on your Colcannon recipe and make sort of a cottage pie the other day. It used up the cabbage, potatoes, onions, and mixed veg that needed using up and it's delicious. I appreciate the inspiration!

I have made savoury bread puddings since the 80s when I married. We didn’t have much money but needed cheap nutritious food. Bread puddings definitely fitted the bill. We would have them about once a week, with salad or some vegetables. I’ve not made one for a few months now. I think it’s time to reintroduce them. They’re great for using up any kind of scraps. I hate waste. I’m loving the look of this one. X

Cook the vegetables a little bit before you put them in and rehydrate the garlic powder. I've never thought of that and this looks so good. I just can't believe it. 18:47 This looks delicious. I make a Mediterranean tarte which I assembled from three different recipes. The first two are based on ones by Elizabeth David, whose books, French Provincial Cooking and Mediterranean Food which, although falling apart, I still possess. The third from a book of Italian food was the topping, from a potato and aubergine bake. So, the pastry is is a thin, pliable one made with butter and an egg yoke which is light and crisp. This is filled with a well reduced ratatouille. The trick with this is not to let the Mediterranean veg., i.e., tomatoes, peppers, red onion, lots of garlic, aubergine, courgette, bunch of fresh basil, fry. It needs to STEW in good quality olive oil (not extra virgin). Simmer gently and drain off any excess oil. Make a topping with natural or Greek style yoghurt, egg, grated extra strong cheddar and a little Parmesan or Pecorino and a tsp. cornflour, similar to the topping on moussaka. E. David's pastry is from her delicious classic quiche Lorraine recipe. E. David, post WW2, was the absolute go to cookery writer. Her recipes were loved by my mother and her classic spag. bol recipe made me a very popular student in the early 1950s. It would be made for parties in a very large aluminium jam pan, with the spaghetti or sometimes more authentic linguine which was boiled in a v. large semicircular cast iron boiler which emanated from my grandparents early 20th century cookshop and restaurant and originally used for boiling hams and round of beef or steaming steak & kidney puddings. Pea soup was made and sold by the jugful from the ham liquor. Those were the days! Oh for the days of plum duff, suet pastry, generously dotted with big Valencia raisins, the latter seem to have completely disappeared from the market or lovely, slippery jam roly poly boiled in a pudding cloth! People, especially women worked hard, long hours cooking and cleaning and soon burned off the calories.

I found your channel about a week ago and have been binge watching. Really enjoy your laid back style. I tried this recipe tonight and it was delicious! Just for others thinking about making it, I’m in the U.S. and followed the recipe loosely. I didn’t weigh or measure any of it except for the custard and it did take about 45 minutes in the oven to be properly baked with the custard set. I used a 9x13 pan and oven was set at 380F. Will definitely be making this again. Next in the list to try out is your steak and mushroom pie.
