Once chilled, this is MUCH better than butter when spread on crackers or toast! I would Go Easy On The Salt, you can always add more if needed.

In Indonesia we use Chicken Schmaltz for a mixture enhancement or infused the wanton noodle or chicken noodle we call it "Mie Ayam " taste as a pork lard subtitute but we call it chicken oil mixed with onion , garlic, and onion leaves .. And we use it to infused the taste of a stir fry food, such as chop suey, fried rice, fried noodles, Black pepper beef stir fry and many !!.. But since we are in budget ....we add palm tree oil ...for adding the volume amount of portion ...one jar size of yours...it can be maximize until..25 coffee cups !!

I just baked up a tray of chicken thighs (ten of them, so I won't need to cook for a couple of days) and used the skin and fat from the chicken to make my Schmaltz.

Chicken thighs have the most fat. It’s what me and my fiancé use the most because we use the bones for soups and bone broth for the dogs. And the meat and skin scraps are turned into treats.

That’s what I do. When I cook chicken thighs for my dog a few times a week. I cook in bulk. Until the chicken is super dry to make sure I get every drop of the rendered fat. Why does it stay somewhat liquidy in the fridge though. Doesn’t harden like butter or coconut oil.

Can you make it with turkey skin and fat too? I tried some this morning with some skin i got from a piece of turkey i ate yesterday. Was great. Maybe it can be made with other birds too.

Yes you can. And they taste so much better. I cook my chicken thighs and then I peel the skin off and put the skin back in the air fryer till it gets really crispy.

My schmaltz solidify in a room temperature after a day- half of the oil. I lived in a hot place. Is something wrong with it? I have seen others especially those being sold commercially that it stays in a liquid form.. I wonder how they do it.. Thanks.

schmaltz is like lard, lard is from pig and schmaltz is from chicken or geese. If lard is solid at room temp in your place, then my guess is that schmaltz would be also

I stored some in my freezer but when it thawed it is now watery and weird. I really want to use it but I have no idea how it turned watery. My bacon fat is still solid after thawing.

Even bacon grease can get runny when heated enough. It is liquid when hot
