Thank you. That answered (visually and instructionally) about possibly using two different filtration level filters. If using a diversion plate in order to use two filtration mediums, what is the biggest differential you recommend (for wine), e.g. 5 micron initial to 1 micron secondary?

on 1:45 it looks like the side of the first plate facing the wine is smooth side when it should be rough side no?

Hi Clement - great question. That is actually a common misconception. The orientation is correct because it is in fact the coarse side facing the wine due to the diversion plate changing the flow pattern. When you follow the flow pattern by looking closely at the inlet side of the plate and see how the direction changes in this second stage, you'll see that it is correct.
