This dish reminds me of Dad's cooking. Simple, quick cooking with everyday ingredients.
Ingredients for 1 person - ⏱️20 min:
- 3 tomatoes
- 3 eggs
- 1cs cornflour
- Chives or garlic (optional)
- olive oil
- Salt
Step by step:
1. Cut the tomatoes into cubes of about 3-4cm.
2. Beat 2 eggs with a pinch of salt.
3. In a frying pan with oil, cook the eggs (scrambled style) and remove them.
4. In the same pan, sauté the tomatoes with a dash of oil and salt.
5. Cook the tomatoes over medium heat until soft.
6. Once the tomatoes are soft, add half a glass of water, the eggs and chives.
7. Mix in a bowl: 1cs cornflour with half a glass of water.
8. Add the above mixture to the sautéed eggs and tomato (note: mix to thicken the sauce).
9. Correct the salt and... That's it!
