Seafood Stuffed Pasta
2 cups chopped fresh spinach
16oz portion of fresh wild caught salmon
4-6 pieces of turkey bacon
20-30 fresh wild caught shrimp
1/4 cup minced garlic
Vegan butter
1 tbsp cornstarch and water
Pink Himalayan salt
Smoked paprika
Garlic powder
Ground black pepper
1/2 box Jumbo pasta shells
1 quart of half and half (non-dairy or dairy) * use 2 quarts if making a bigger portion and double the other ingredients)
Sunflower oil for cooking
BelGioioso four cheese mix (asiago,fontina, parmesan,provolone)
1. In a heated pan, cook your turkey bacon in a little sunflower oil. Make sure to flip when half way done. When its done just set aside.
2. Boil water for pasta shells. Then cook until al dente.
3. Season clean, peeled and deveined shrimp with garlic powder, paprika, black pepper and a pinch of pink himalayan salt.
4. Toss them around until all shrimp are evenly coated.
5. Now season your salmon (flesh side) with paprika, garlic powder, black pepper, and a pinch of salt.
6. In the same pan you cooked your bacon in, place your shrimp flat down in pan. Then add your butter to the pan. Be sure not to over crowd. Flip halfway through cooking. You want to get a nice seer on each side.
7. When your shrimp are done cooking, place your salmon in the same pan skin side down first. Cook until your salmon skin is slightly crispy.
8. Place your bacon on the cutting board and chop them into small pieces. Set aside.
9. Flip your salmon over. While the other side is cooking, peel off the skin and throw away. Season that side of your salmon.
10. Place your shrimp on the cutting board and cut each piece in half. Then set aside.
11. After about four minutes, flip over again and cook the side you just seasoned for about 4-5 more minutes. Take your salmon out and place on cutting board.
12. Now cut up your salmon into pieces/small chunks. Set a side.
13. In a clean and heated pan, add your mixed garlic and stir until fragrant.
14. Next add your half and half to the pan.
15. Mix your cornstarch slurry. (Cornstarch and water)
16. Add you seasonings. (Paprika, garlic powder, black pepper and salt) Stir
17. At this point your sauce is heated and starting to bubble.
18. Add in your cornstarch mixture and stir well.
19. Now it’s time to add in your cheese and keep stirring until all the cheese has melted.
20. Next add your chopped spinach. Stir until slightly wilted.
21. Now it’s time to add everything to your baking pan.
22. Spoon a layer of your sauce to the bottom of your pan.
23. Add a layer of shells. (With opening up)
24. Add some salmon and shrimp pieces.
25. The add some of you shredded cheese.
26. Then add another layer of sauce.
27. Repeat these steps until the pan is full. For your top layer add extra cheese and sauce. Bake in oven on 385F (cover with foil) until all of your cheese has melted. About 15 minutes or so.
28. Take out of oven, sprinkle on your chopped turkey bacon and enjoy!
