Seafood Tofu or 招牌豆腐 is a very popular dish many will order when eating in any local restaurants. The surface must be crispy, inside must be very tender and full with nice seafood flavours. U may increase the ratio of the fish paste if u prefer.
Ingredients:
3 tubes of Japanese Egg Tofu (75g per tube)
150g of fish paste
2 tablespoons of chopped carrot
1 tablespoon of chopped fresh corianders
1 tablespoon of chopped spring onion
2 teaspoons of corn starch
1 piece of chicken egg
Seasoning:
2 teaspoons of Shaoxing cooking wine
1 teaspoon of premium fish sauce
Pinch of salt
Pinch of sugar
Few dashes of white pepper
1 teaspoon of sole fish powder (homemade)
Few drops of garlic oil (or sesame oil)
Method :
(1) place everything together and mixed well.
(2) spread mixture to a rectangular baking tray lined with baking paper and press evenly.
(3) steam over medium high heat for about 20 mins or till set.
(4) then leave cooled about 10 minutes before slicing.
(5) finally, coat each block of tofu with corn starch and fry till golden brown.
