The best brisket I ever made was with this exact method and now I do all my tri-tips exactly the same way and they turn out like perfect little mini briskets. Home run of a recipe right here folks.

killer combo of good stuff- sharp knife, good blend of pellets, good coverage of rub, wrapping at the right time, using a foil boat and paper to preserve bark. man oh man, this cali dude may know about brisket lol. good job bro.

Brisket looked amazing. Nice cook. One thing I thought I saw, be careful injecting your brisket from the same container you store it in for later use. In theory, you could encounter pathogens upon entry of the brisket, then contaminate the entire injection, which isn't a big deal, but then using it as a mop for the wrap could, in theory cause problems. Not trying roast you at all, just a thought. I voted for you in this one. Love smoking low at 200 and going to sleep.

I did fat cap down but on the Brunswick you can do either. Let me know how your brisket turns out. Only thing I would do different next time is do 225 instead of 200.

So a brisket can take 14-18 hours so it’s better to go off an internal temperature. I pull my briskets when they hit an internal temp of around 205.

Hello Grill Sergeant. How do I keep my brisket from locking up. I followed your recipe to the letter and it locked at 146. My previous brisket did the same. What am I doing wrong? Arrrrrrrrrrg

Yo! So just to make sure we are on the same page, when you say it locked, are you talking about the internal temp of the brisket getting “stuck” and not going up anymore? If so that is the stall. What’s happening inside the brisket is all that fat on the inside is starting to render out (which is what you want) but it’s cooling as it’s rendering. The longer the stall, the more juicy the brisket is. You have 3 options. Wait it out. Crank up the temp or wrap it in foil at that point to help get it past the stall.

Hey! Glad you found this video. To date, this was the best brisket I’ve ever done. Total cook time was about 16 hours but every brisket is different so I plan for longer and hope for the best. Going forward I’ll put it on around 10pm at night at around 225-250. And I’ll spritz every hour starting at 6am the next day. I’ve found leaving the brisket alone at the start helps form a really nice bark and while if you spritz more often you will get a slightly smokier taste I would rather get a great nights sleep. 😂

I just bought a PB pro series 4 - 2, and am going to smoke a brisket tomorrow. After you wrap the brisket, do you continue to use the pellets? Can you run the PB pro 4 - 2 without pellets? Including letting the brisket rest it was about 24 hours. Check out my latest brisket video. I bumped up the temps starting out at 225 then did 250 in the morning. You will save about 5-6 hours doing it that way.
