In Chaozhou, a coastal city in Guangdong Province, chef Xu Weixin has put Chaoshan Tower Restaurant on the map with handmade beef meatballs that represent the local style of Cantonese cuisine. The physically demanding technique required to make this signature dish is one of many lessons that Xu has taught his young apprentice, Chen Youtian. These two generations of chefs talk about how the Guangdong government’s Cantonese cuisine chef training programme brought them together with a shared goal of keeping traditional Chaozhou cooking alive and evolving.
