Are you a server? Do you wish your tips were bigger? In my Restaurant Training Video Course, I tell you what WILL make a DIFFERENCE. I do not teach how to be a server in a fancy French restaurant because I want to keep it simple, but my first tip is “Be as professional as a French server”.
Let me explain this concept. It is huge, and it will have a HUGE impact once you understand it. I have seen the results in my own restaurant over and over. The keyword here is PROFESSIONAL.
You will be noticed by all your customers, and they will know that something is different.
You never want to ignore the customers who will notice you and who have the money to tip you… and to tip you well. Think of that.
CLEAN LOOK
Your appearance is crucial. Never underestimate this statement as long as you keep serving people.
GOOD ATTITUDE
Be happy, be friendly. A small mistake will be forgiven more easily if it comes with a smile. Be pleasant.
PREPARE YOUR AREA
Prepare your work area, check your equipment if YOU actually use the equipment - espresso machine, beer tap handles, etc.
SET YOUR TABLES
The tables and the utensils must be clean - Even water spots on the utensils can catch SOME people’s attention.
Check your reservations and don’t play it too close between tables. You as the server have great control over the tables, but you do not have FULL control.
CLEAN RESTROOM
Make sure that the restroom is clean at all times. Not your job? True, not your job. But keep an eye on it, and demand immediate attention if there is a problem.
GREET YOUR CUSTOMERS
Whether it is at the door or at the table, your first contact with your guests is critical.
You need to be pleasant, polite and engaging, not too demonstrative, but not too reserved either.
BEVERAGES FIRST
It is imperative that you deliver the drinks as quickly as possible and BEFORE you deliver the food.
Make sure the glass, the mug, or the cup is clean, oh so clean. And as a rule, beverages should always be served from the right side.
PRESENT THE MENU
When you present the menu, know what’s available and what’s not, know your specials and promote them
If you are serving wine, you must learn about wine. There is a lot of information on the Internet. Study and
memorize it. The more you know about wine, the better you will be at selling wine, and the bigger your tip will be.
Be curious and informed about what you are serving. First of all, that will make your job more interesting,
but also, the more informed you are, the more knowledgeable and credible you will be.
You will establish TRUST with your guests, and that WILL be reflected in your TIPS.
DELIVER THE ORDER
When you deliver the order, never carry anything under your arm.
Do not snack in the kitchen and come out smiling with food residue stuck in your teeth or worse yet, accidentally spitting food out when talking to your customers. That would not be good.
Learn how to use a tray - Practice at home, and remember that, as you load and unload your tray, the center of gravity shifts…
Develop some good memorization techniques so that you can remember who ordered what when you bring an order to a table. Your guests will be very impressed and flattered. They will truly love it.
As a general rule, the server uses his left hand and brings the plate to the guest’s left side and removes the plate with his right hand on the guest’s right side.
What is never okay is to lean across to deliver beverages or food.
Do not rush your guests. The good flow depends entirely on you, the server.
Of course, all dirty dishes and utensils must be removed between each course. Only the glasses IN USE must remain on the table. Nothing else.
STAY CALM
As a server, you have to be able to work efficiently while staying calm. If you stay calm, you stay focused.
If you cannot take the stress, you will be frazzled, and your world will fall apart.
COMPLAINTS
If there is a complaint, be polite and courteous.
1) Thank the customer for bringing the problem to your attention
2) Try to solve the problem before it grows bigger
Your Number One goal is to make the customer happy.
REMOVE DIRTY DISHES
As you are removing the entrée dishes, let your guests know about dessert.
If they do not wish to have dessert, THEN you may bring them the check.
Do NOT bring the check before. You would be seen as rude and ignorant.
BRING THE CHECK
Place it in front of the person who you know for sure is paying, or, if no one motions, the best spot is at the very center of the table.
