Last Fall I came across the idea of shaved Brussels sprout salads. They became a staple in our house last fall and winter. Today I'm sharing my favorite version with you! This one has feta or blue cheese, dried cranberries, and a homemade poppy seed dressing. If you top it with some chopped up rotisserie chicken, you've got a really simple weeknight dinner salad. While working on the salad, I also have a big pot of chicken broth on the stove that I need to preserve. We can 10 pints of broth, as well as getting four quarts worth into the freeze dryer to see if we like that preservation method. If you've been putting off pressure canning out of fear, give canning broth a try. It really is the best place to start.
