Shigemasu is our first ever vacuum distilled release, made at the Takahashi Shoten Brewery in Fukuoka, Japan. The Shigemasu sake brand is sold almost exclusively in the prefecture where it's made, but we've been able to import their sake lees shochu to the US.
The daiginjo sake lees - leftover solids after premium sake production - are re-fermented with fresh yeast, rice, and yellow koji to create a singular expression. Shigmasu has all of the beautiful aromatics you would expect from a premium sake, but with no residual sugar thanks to distillation. Bottled at 30.5% alcohol, Shigemasu provides a drinking experience unlike any other spirit on the market.
Highly recommended on the rocks or with sparkling water.
