🥥Tom Kha Gai paired w/ Kawabe Rice Shochu 🥥
Ingredients (Serves 2)
Sliced to bite-sized chicken meat (white or dark) 1.5 cups
White or oyster mushrooms 1 cup
Chicken stock 1.5 cup
Coconut milk (can or box) 1 3/4 cups (regular Chaokoh brand 400 ml)
Lemongrass 1/3 cup, Galangal 1/3 cup, Kaffir lime leaves (Bai makrut) 3-4 leaves
Red and green Thai chilies for garnish and extra heat (optional) 2-3 or personal heat preference 😉
Lime juice 3 tbsp
🍍Pineapple Fried Rice paired w/ Shimauta Awamori🍍
Ingredients (Serves 2)
Coconut oil or canola oil 1 tbsp
Whole medium shrimp (shelled+deveined) 1.5 cups
Chopped fresh pineapple 1.5 cups
Golden raisins 1/2 cup
Pea and carrots (optional) 1/2 cup
Chopped garlic 1/2 tbsp
Chopped white onion 1 tbsp
Chopped green onions 1/2 tbsp
Curry powder (optional) 1 tsp
Raw, unsalted cashews 1/2 cup
Cooked and chilled overnight regular or brown rice (long-grain jasmine rice) 4 cups
Salt or fish sauce to taste 1 tsp (fish sauce 1 tbsp)
