I made three pizzas, one with whole-milk mozzarella, one with part-skim mozzarella, and one with a 50-50 mix of whole and part-skim (all Trader Joes brand mozzarella). The difference between the three was negligible. Any option works great.
Dough Recipe (makes one 12" pizza)
153 grams King Arthur bread flour
100 ml water
4.3 grams table salt
2 grams evo
1.5 grams sugar
.5 grams instant dry yeast
