2 frozen udon blocks (each weighing about 0.55 lbs)

1/3 cup orange bell pepper, julienned
1/3 cup yellow bell pepper, julienned
1/4 cup red onion, thinly sliced
1/4 cup thinly sliced cucumber (mini cucumber was used here)
8 cherry tomatoes, quartered lengthwise
12 small cooked shrimp, peeled and halved
4 hefty cups of greens (of your choice; "Sweet Green Mix" was used here)
