Ingredients
175g butter
1 Tbsp golden syrup
1 level tsp bicarbonate of soda
2 cups of oats (not the quick cook kind)
1 cup desiccated ground coconut
1 cup flour sieved
3/4 cup white sugar
pinch of salt
1 tsp ground cinnamon
Instructions
1. Preheat oven to 180C/350F.
2. In a large mixing bowl add oats, coconut, flour, sugar and salt.
3. In a bowl or jug add butter and golden syrup and melt in the microwave until till gently bubbling.
4. Add tsp of Bicarbonate of soda to melted butter and syrup mixture while it is still bubbling.
5. Create a well in the dry ingredients and then pour melted butter mixture into the middle and stir well until combined.
6. Butter or spray with non-stick cooking spray, a baking dish of of approximately 9x13 inch or 8x8 inch, depending on how thick you want you crunchies to be. They will not rise much.
7. Pack the mixture tightly into the baking dish by pushing the mixture down with the back of a spoon, or clean hands.
8. Bake at 180C/350F for 15 minutes. Then turn down to 160C/320F for a further 10 minutes.
9. Cut while hot, but only remove from dish when cold.
Store in an airtight container and they should keep nice a Crunchy for about a week(if they last that long).
