Today, we're going to bake some delicious cookies with leftover sourdough starter. I make these cookies regularly and always pack them for trips. They're perfect for snacking on the go, a wonderful addition to kids’ lunchboxes, ideal for picnics, or just to enjoy with your morning coffee.
The ingredients:
200 Grams Rolled oats
50 Grams Unsalted Butter
60 Grams Vegetable oil
50 Grams Sourdough discard
1 Egg whole
1 Egg yolk
85 Grams All purpose flour
3 Grams Baking Soda
5 Grams Salt
120 Grams Sugar
4 Grams Cinnamon ground
4 Grams Vanilla extract
The instructions:
Melt 50 grams of butter. Remove from heat, Add 2-3 tablespoons of cinnamon.
In a separate bowl, mix 50 grams of sourdough starter with one whole egg and one egg yolk. add 85 grams of wheat flour, which can be whole grain. Add 120 grams of sugar, which can be cane sugar, 5 grams of salt, 4 grams of vanilla sugar, and 3 grams of baking soda. Then pour in 60 grams of vegetable oil. Combine both mixtures and add 200 grams of oat flakes.
Line a baking tray with parchment paper and shape the cookies. Place in the freezer for at least half an hour.
Bake at 180 degrees Celsius for about 20 minutes.
The cookies are crispy, very tasty, and nutritious - they serve as energy bars because they are great at satisfying hunger and keeping you full for a long time.
