Great video Hunter! Swansea has some keen leatherjacket fishermen, and they like a little salt on them when they do fry them at a minimum time of course to be cooked through.

Leatherjacket=chicken of the sea. I was fishing at Wilson's promontory off the rocks. 1 hook paternoster rig. I hooked a parrot fish in the mouth and the line wrapped around spike of leather jacket. Dragged up the rocks! Two fish on one hook! 100%

I remember my young son catching his first jacket at Brisbane Waters. I didn’t know what it was but thought it was so ugly it mustn’t be any good so I unhooked it and threw it back. My step father told me it was a jacket and we should have kept it. Damn!

Start with this video, jackets is one of the first fish we all started fishing for they common around wharfs so was a common catch. Then move on to mullet, whiting, bream and flathead once mastered that can look at the ocean. Best to take small steps confidence is the main part 👍

Butter is the secret ingredient in stew or curry. Real dairy butter, not margarine. I used to drive my truck past this oil refinery place. One day the traffic was a bit jammed and I had time to read the sign on the fence. It said Meadow Lea. 😂

Mate well done my mum lived at davo and she would take me out and have the same rig but different bait . She used to put them in foil with salt pepper butter and lemon and on the bbq they were beautiful .

Matey', livin' in Sydney all them years ago we used to fill up on Jackets and Dory off the Taronga Zoo wharf. I remember running along the beach alongside the wharf chasing soldier crabs for bait. My mouth is watering thinking of plating up those beauties. Classic fishing guys liked and subscribed 🤟

The bite is suttle they inhale and spit it out till it's only a hook left. Got to try time the strike for the inhale takes a bit of feel, we used to use handlines for best results. I use the Panosca because the bottom is very snaggy
