When I first got diagnosed with Ulcerative Colitis, I was given no resources and no guidance. I had to do a lotttt of research and there was so much trial and error. My goal is to help others so they don't have to struggle like I did with figuring out what to eat and to help reduce the anxiety of eating because you don't know what will send you into a flare up.
This is a really simple recipe, it can be done in less than 20 minutes if you're moving and grooving. If you're in a flare up it can take longer but there are very few steps 🤍
Ingredients:
❀ 1lb ground turkey
❀ 1/4 onion
❀ 2 eggs
❀ 1-2 cups of rice
❀ sauce of your choice - I used Bachans hot & spicy bbq. I was not spicy to ❀ but if your IBD tolerates NO spice please sub with whatever you like (teriyaki, soy sauce w some brown sugar, etc)
❀ salt, pepper, ground ginger, garlic powder to taste
❀ kimchi
❀ vegan butter (optional)
Cooking Instructions:
❀ Start off making your rice, mine was enriched so no rinsing needed. 1 cup of rice = 1 cup of water for your ratio in a rice cooker. Without a rice cooker do the same measurements in a pot and then check to make sure the tip segment of your finger is covered by water! Don't take the lid off until it's done!
❀ Throw some oil in a pan on med-high heat and once it's hot enough toss your onions in. Once they are translucent you'll add your ground turkey and mash it up in the pan. Add your seasoning, mix well. Add your sauce, mix well. Once the turkey is mostly cooked you'll crack 2 eggs in the pan, drop the heat to med-low and cover until cooked to your liking. Remove the lid and stir to distribute the eggs & remove from heat.
❀ Once rice is done you can season it if you like, I add vegan butter, salt & pepper.
❀ Plate everything up, add your kimchi and enjoy!
*** If you are garlic and onion intolerant you do not have to add those. They digest fine with me but for others they do not. You can leave them out and stick with your favorite sauce!
