Making Sourdough bread does not have to be difficult nor time-consuming - in fact, let me show you just how quick and easy it is to make a simple sourdough bread, that comes out amazing every time. This episode will focus on a sourdough hybrid bread, but you can also use this for regular sourdough bread, by simply omitting the instant yeast. Enjoy!!
“Simple” Sourdough bread - 2 Versions: Regular or Hybrid
Ingredients:
• 400 gm flour (weighing flour is best, but if not, use 3 cups. Flour can be all-purpose white flour, or, you can use 350 gm all-purpose white + 50 gm of whole wheat OR you can use 350 gm all-purpose white + 50 gm rye flour. As long as the total weight is 400 grams)
• 1 ½ tsp table salt or sea salt
• ¼ tsp instant yeast (use only if making Hybrid, if not, omit this)
• 200 gm sourdough starter
• 320 gm warm water (~80 degrees F)
Direction and Method
• In a bowl, mix all ingredients together, just until they are all incorporated (you can use a stiff spatula or a wooden spoon - or a mixer or your hands. It will be very sticky
• Cover bowl with a plastic wrap and then with a kitchen towel
• Let stand at room temp for 12 - 14 hrs.
• Remove dough from bowl (I use a spatula) and place onto a floured surface
• Do a 4-fold (i.e. grab one end of the dough, lift and fold it over to the other side. Do this with all 4 sides)
• Shape the dough into a round shape and place it into a floured proofing basket, or, to a floured plastic cutting board.
• Sprinkle some flour on the top of the dough and cover with a kitchen towel, let stand at room temp.
• After 1 ½ hours, turn on oven and set to 450 degrees F - place an empty Dutch oven (or any oven-ready container with lid), with lid on, into oven.
• ½ hour later, carefully remove the hot Dutch oven and lid. Place your dough into the Dutch oven, put the lid back on, then put the Dutch oven back into your oven
• Cook for 30 mins with lid on, then remove lid and cook for another 15 mins., or, until the bread has reached the color you prefer.
• Remove the bread from the Dutch oven and let cool on a cooling rack (try to wait at least 15 mins before cutting into your bread, but a 30-minute wait time is preferred)
