Summer is here!!!! And in my opinion one of the best styles of beer to brew in the summer is a Saison. For this brew I switched things up and took my kettle outside to the backyard, because...well, why not? That's one of the great things about using brew in a bag and propane; I can brew pretty much wherever I can carry my equipment. And since I was going to be brewing outside I thought what better style to brew than a farmhouse ale, Saison. I'd like to think that when this style originated, they were being brewed outside in a barn or something anyway.
I used WLP565 Belgian Saison Yeast for the first time and was not sure how well it would ferment. Brewfather was estimating a final gravity of 1.011 and I had found mixed reviews about this yeast on the internet. Well, I was pleasantly surprised at how well this yeast finished out and look forward to fermenting with it again.

Recipe for a 4 gallon batch:
6.69 gallons RO water
Ca2 - 97ppm
Mg - 16ppm
Na - 8ppm
Cl - 25ppm
SO4 - 263ppm
HCO - 16ppm
I added 1.1g Calcium Chloride, 4g Epsom Salt, and 9.1g Gypsum to my mash water.
Fermentables:
6lbs Pilsner Malt
1lb Rimrock Rye
8oz White Wheat
5oz Caravienne
5oz D-45 Candi Syrup @15 minutes left in boil
Hops:
.4 oz Magnum @45min
1 oz Fuggles @10min
.5 oz Hallertau Blanc @0min
Yeast:
I made a 1.2 liter starter with WLP565 and fermented at 75-80F until FG was reached.
Misc:
1 Whirlfloc tab @15 min
.5 tsp yeast nutrient @ 15min
I mashed at 148F for about 45 minutes and only did a 45 minute boil as well. Adjust as necessary for your system and needs.
