Welcome back to Organic Living and Kitchen. Today, I will be making and canning stewed tomatoes. Simply love this easy approach to canning. I will be using stewed tomatoes to make lasagna, chili, borsh, and many other amazing dishes. Please join me as I bring my most delicious recipes to you.

Th first thing that will be needed is 8-10 pounds of fresh tomatoes. For best results, use garden tomatoes or tomatoes from the farmers market.
Wash and rinse the tomatoes. Place them into boiling hot water for 30-45 seconds. Remove, peel the skin, and dice them into 1/2 inch pieces. Place them into a strainer to help remove extra liquid from the tomatoes. Then, place tomatoes into a cooking pot.
Place them onto a cooking stove on medium to low heat and cook them for 30-45 minutes.
You are welcome to add any herbs, spices, or even jalapeño pepper to your stewed tomatoes. I like to add basil, savory, and sage as my herbs. I also placed 1 Tbp of salt and 10-12 cloves of peeled and squeezed garlic. Mix and continue to cook.
Also wash, rinse, and place the jars and lids into the oven at 250 degrees fahrenheit for 25+ minutes to help sterilize the jars. Also, boil anything else you may need for canning.
Remove hot jars from the oven and fill them with hot boiling tomatoe stew. Cover with hot lids and place them upside down on a blanket or a towel.
For extra sterilization, boil water in a deep pot. Place the kitchen towel or a wash cloth on the bottom of the pot. Place the canned stewed tomatoes and boil for 20-25 minutes. Make sure the water coveres the tomatotes.
Remvoe and place onto a blanket or a towel up side down, cover and let cool for 24hrs. The lids will be suctioned inside. Label and place into the pantry for up to 3 years. Enjoy cooking with stewed tomatoes.
