Sinigang
Ingredients
1 lbs pork ribs(cut into chunks)
1 lbs pork belly(cut into chunks)
3 bay leaves
1 tbsp black peppercorns
3 tomatoes(quartered)
1 large red onion(quartered)
Eggplant(cut into 1/2 inch circles)
Daikon Radish(cut into 1/2 inch circles
6 long beans(cut into 2 inch pieces)
2 long green chili peppers(you can use Thai chilies instead)
1 piece taro(cut into chunks)
1 bunch bok choy(you can use spinach as well)
8 cups water
1/4 cup fish sauce
1/2 to 3/4 cup tamarind paste(season to your taste)
Salt to taste
Instructions
1. Prepare and wash all of your vegetables.
2. Cut pork into chunks and blanch in water with bay leaves and black peppercorns for 20 minutes(removes scum and cleans bones).
3. In a pot, simmer the blanched pork with tomatoes, onions, and the 8 cups of water for an hour and a half or until the pork is soft.
4. Season the soup with tamarind paste, fish sauce, and salt.
5. Add the chillies, daikon, eggplant and taro and simmer for 20 minutes.
6. Add long beans and cook until tender(5-10 minutes).
7. At the very end, add bok choy(2-3 minutes).
8. Serve the singing with rice and enjoy.
