Looks yummy. I have a simple question, my mother used to make beef stew and I missed the opportunity of getting her “techniques” for this dish since she didn’t make it often and never used recipes . I know all the basics of preparing, it was very similar to her pot roast, except for one seasoning I can’t figure out. I have googled and googled recipes to see if I could figure out the taste difference in beef stew and pot roast. I came from a poor family and seasonings were very basic, no wine or exotic seasonings not even bay leaves. I know it is something I have in my spice cupboard. I have experimented with different spices and herbs, but can’t capture the difference. It’s not cinnamon or nutmeg. I put all the usual fresh veggies in beef stew. I am told I’m a good cook, but this has stumped me for 40 years😢😂. That flavor is in every beef stew I have eaten. Could you help or anyone else? Thanks. ❤❤❤Blessings.

Hello, Rachel….love your channel, and I recommend it to everyone…especially to those who say, “I can’t cook”…..you’re a wonderful teacher and such a help to those who are just learning. In high school, I worked in a restaurant with and elderly gentleman who had spent his life cooking in restaurants in New Orleans. He taught me a trick when making a lump-free roux. The liquid and the flour/fat mixture must be opposite temperature….if one is hot, the other must be cold. In restaurants, the cook often does not have time to make a roux from the start as it can take some time. So he would make big batches of the cooked, seasoned flour and store it in the fridge. It would be the consistency a bit like ice cream..but not frozen. Then, when an order came in, he’d scoop out some cold roux, put it in a skillet and add hot stock/milk/broth…depending on the recipe. The roux would be the perfect consistency and no lumps! Of course, for home cooks who are making normal sized meals, the seasoned flour is hot, so just make sure the liquid added is cold…..no lumps! It has worked for me every time for years!
