I tasted Slovenian Ribolla in 2005 and loved it so much that I planted two acres In the Clements Hills AVA, Lodi, CA. We sell most of the grapes to wineries from Monterey to Mendocino County. On our third leaf we reserved one ton to make a sparkling wine. Harvested at 19 brix with a pH of 2.95. Grapes were whole cluster pressed and cold settle off gross Lee's. Juice was fermented in a oval fermenter for 40 days. Once settled racked off the yeast and aged a year on fine Lee's. The wine was than went through the traditional method for another year. Like you mentioned. It is lite and cleans your pallet. You should try these wines produced in California. If you want more info about our grapes and wine made from it. Type in "Lodi Ribolla Gialla." Most Slovenians will say that Rebula is Slovenian, but I read somewhere that recent research shows it originates from Greece. Great review!

Interesting! Not a variety I am familiar with. Well, never had a Slovenian wine of any type, actually. Will have to seek one out! Question, just out of curiosity, you mentioned there is some Rebula in California. I’m sure it must be a tiny amount, but where are they growing it?
