This Slow Cooker Chili is comfort food at its finest! Tender fall apart beef and beans is cooked in a rich tomato sauce and a homemade chili seasoning. Top it with your favorite chili toppings and you have yourself the coziest meal ever!
Slow Cooker Chili
Ingredients
2-3 lbs chuck roast, trimmed and cut into 1 inch pieces
1 onion, diced
2 tablespoons chili powder
2 tablespoons cumin
1 tablespoon dried oregano
1 tablespoon garlic powder
28 oz can crushed tomatoes
1/4 cup tomato paste
1 cup water
2-3 15 oz cans kidney beans, drained
Optional toppings - shredded cheese, sour cream, tortilla chips, chopped cilantro or green onions, hot sauce
Directions
Season beef cubes with salt and pepper.
Heat oil in a pan over medium high heat, and sear beef about 2 minutes per side.
Remove and set aside.
Reduce the heat to medium and add onions. Season with salt and cook until softened, about 3 minutes.
Transfer beef and onions to the slow cooker.
Add chili powder, cumin, oregano, garlic powder, crushed tomatoes, tomato paste, water, and kidney beans.
Mix well and season generously with salt and pepper. Cook on 6-7 hours on high or 9-10 hours on low, or until beef is tender and falling apart.
Serve with your favorite toppings.
