Ingredients;
2 lbs chuck roast (beef)
10 oz parsley before cleaning, 4 cups chopped
10 oz cilantro before clearing, 2 cups chopped
7 oz green onions before cleaning, 1 1/2 - 2 cups chopped stalks
1 tbsp dried fenugreek
3/4 cup kidney beans
1 large onion
3 limoo amani
2 Tsp salt
1 Tsp pepper
1 Tsp turmeric
4 cups water
1/2 cup oil
Instructions;
- Soak beans and set aside.
- Wash and clean greens separately as some contain more grit than others. Rinse until water runs clear. Set aside to drain.
- Remove thick stems from parsley and finely chop in small batches. We need 4 cups chopped for this recipe.
- Clean and chop cilantro in the same way as parsley. Need 2 cups chopped.
- Remove whites from green onions. We only use the green stalks in this recipe. Remove brown ends from stalks. Cut and separate upper stalks and finely chop the greens. Need 1 1/2 to 2 cups chopped.
- Peel and chop onion. Set aside.
- Cut beef in small chunks about 2 inch cubes. Remove silverskin as it will not soften during cooking.
- Rinse and drain beans. Set aside.
- Heat 3 tbsp oil in a large skillet and sauté onions until translucent. About 6 minutes on high. Stir often.
- Add turmeric and mix well. About 30 seconds.
- Place sautéed onions in crockpot.
- Add 1 tbsp oil to skillet and sear meat in 2 batches. About 2 minutes on high. Add to crockpot.
- When all the meat has been seared and removed from skillet, deglaze skillet with 1 cup water. Pour au jus over meat and onions. This will add flavor to khoresht.
- Using a clean skillet, cook down chopped greens ( parsley, cilantro and green onions) on medium high for 7 minutes. Stir often.
- Then add 2-3 tbsp oil and fry greens for another 7-8 minutes. Take care not to scorch greens. Lower temperature if it starts to stick. This will release the aroma and deepen the color.
- Add greens to crockpot. Use water to loosen greens from crockpot. I used 3 cups.
( I added 4 cups water to stew in stages.)
- Next add beans, salt, pepper, fenugreek and pierced limoo amani to crockpot. Mix, cover and refrigerate overnight.
- In the morning set slow cooker on low for 8 hours.
- Serve with rice.
