I was super worried about how this would turn out given the comment section. However, I’m glad I did! It turned out beautifully! It makes a good amount of food and isn’t too overpowering or too bland. I did make some adjustments to the recipe like replacing the sweet potato with a russet potato and adding about a tablespoon more or less of seasoning salt (with sugar). I opted for a smaller can of diced tomato and diced up a fresh Roma tomato. Left out the garbanzo beans and added 2 cups of red lentils in place of quinoa. Slowly cooked on low for 8 hours. Super good! Veggies and lentils are nice and tender, and it emanates a sweet curry smell. I feel a repeat is due 🤎

There are vitamins and nutrients in the stems of broccoli. Especially in a recipe like this (slow cooking), you should include the stem, too!

Yes indeed. Everything is edible. I have a lovely broccoli soup I make to use up the stalk. I have also used the stalk in this recipe although it wasn’t intentional. It was really nice and soft.

So i made this today in my slow coocker; I ended up adding a bit more salt and some curry powder (a little more than a tablespoon). I also added some sugar, weird but good (about a tbsp)

the brocolli and sweet potatoes become a mush if someone chooses the 8 hour time. Most of these veggies will cook fairly quickly in the slow cooker so 4 hours is more than enough time.

Awesome! The same can be done in a pressure cooker. Saves 3/4th of the time.... Throwing in a small stick of cinnamon, a star anise, a couple of cloves and a bay leaf with make this dish very earthy and robust.

I had seen this recipe online and tried it last week. Didn’t have chickpeas so I swapped in an Aubergine that needed using up. Didn’t follow the recipe quantities just went with my feeling. It was very nice . But I hadn’t put enough quinoa. Made it again this week; made sure all veggies were chopped to the same size, put loads more quinoa and used less liquid. I will eat it with Naan bread for my lunch.

I don't know why so many people complain about this recipe. I just cooked it today on High for 5 hours and loved it! The only change I made was a few extra chilli flakes for a nice kick.

I prefer to use a Dutch oven. It cooks from all sides including through the lid which is often self basting.

So the only thing is broccoli cooks quicker than sweet potatoes, so try adding broccoli about 1 and 1/2 hours before end. For a thicker stew consistency add 1/2 cup water and cook on high for 4 hours. Cooking on low increases water inside slow cooker. This is an exceptional weeknight dish and vegan 😍😍😍🙌🏾🙌🏾🙌🏾 and I can’t get over the background music

I actually love broccoli like this. When it's cooked down like this it becomes really tender and the flavor profile changes a bit. It's also much easier to chew.

Skye Laform The coconut flavor sort of dies out when the heat is on but you will still get that creamy taste. Trust me it is delicious.

I wonder if the broccoli turn too soft and mushy being all that time cooking.... i've never used a slow cooker but I tried cooking broccoli on a pressurr cooker for 3 minutes and I ended using it in a cream cause it turned out like a mushy mess

Something I noticed in many american recipes is that something can be left for 4-8 or even 10 hours on the stove. Is this a pretty normal thing to do? Just to leave a pot on the stove for hours? Because in many other countries I did never see something like this thats why I'm curious

Curry paste and curry powder are literally just mixes of spices. Its like saying Cajun powder (which is like cumin and oregano and stuff). But that being said, having only tumeric garlic and ginger will lead to one of the blandest curries ever. at least in my opinion

consistency wise, it is curry. But the paste a.k.a the spices which made it curry. There is curry tree which its leave is the core ingredient for the curry. Literally it's just turmeric, coconut milk and water, nothing special.

Bình Curry tree is more like an herb than an actual tree and it's leaves are used mostly in South Indian dishes. It's actually not a core ingredient of authentic garam masala or curry powder. Garam masala is basically powdered whole spices but the ratio and spice differs with regions. I've never heard of Curry leaves being used for making garam masala.
