Chicken Chimichangas
Ingredients:
3 boneless skinless chicken thighs
small green pepper chopped
small red pepper chopped
8 cloves of minced garlic
small onion chopped
8 large flour tortillas
1Ib white American cheese
small can of green chilis
1 jalapeño chopped
1 1/2 cups of heavy whipping cream
1 Tbsp of butter
oil
El Reys chicken seasoning
cumin
slap ya mama seasoning
Directions:
Season your chicken on both sides with the above seasonings. Next sauté the chicken in a cast iron skillet on medium high heat in 5 Tbsp of oil until it temps to 165. Remove the chicken from skillet and shred it apart in a bowl and set aside. Next add your chopped veggies in the same skillet the chicken was in and saute veggies until translucent. Remove veggies from the skillet and combine with the shredded chicken in the bowl. Season with above seasonings if you feel like the filling needs more. Next lay your large tortilla down and fill It with the chicken filling, red onion (optional), cilantro and Oaxaca shredded cheese or Monterey Jack cheese. Fold it up like a burrito and fry them in a cast iron skillet until golden brown. Once done drizzle queso dip on top. Optional-Garnish with red onion, queso fresco, jalapeño and diced tomatoes and enjoy!
Queso Dip Directions:
In a sauce pan add 1Tbsp of butter. After it melts, add chopped jalapeño, half the can of green chiles and 1Tbsp of minced garlic. Sauté 3-5 minutes then add your white American cheese. Allow to melt then add your heavy whipping cream. Simmer on low heat stirring frequently until smooth and creamy! Enjoy!
