I'm 90% sure that when they call Mr Boss in the Brazil episode, they actually called the voice actor in character without letting him know beforehand. His initial confusion and then struggling to think up a solution to the hotel issue is so realistic I don't think it was acting.

So Adult Swims show have a bit of a technique they employ to make these scenes and it's used by literally every Adult Swim show since it became a progamming block. This technique is called "Retroscripting". The short of it is that instead of writing out the dialogue, the script will just have sections where it says "Talk about whatever here" and the V.A's just talk about whatever. For some teams, it meant just recording the V.A's out on a lunch break or shooting the breeze inside the studio. It was initally utilized by Home Movies extensively to make its dialogue work and it's been picked up by nearly every Adult Swim show you can imagine. Aqua Teen Hunger Force, Space Ghost: Coast To Coast, Sealabs, The Venture Bros, Rick and Morty and most recently Smiling Friends. It's a time-honored writing trick at Adult Swim and if you look into the behind the scenes of these shows, you'll find every single one has utilized this technique to some extent (Rick and Morty's drinking sessions in the studio, The Venture Bro's team recording lunch time conversations of the V.A's). It sounds unscripted because it is intentionally unscripted improv in the middle of a script.

This reminds me of how Family Guy wants to have these moments of "relatable conversations", but all they do is just recite what's on the script, sometimes make it longer than it is. Whereas in "Smiling Friends", these moments feel natural and are quick moments that show how spontaneous some moments can be.

Don’t get me wrong, I love every show I’ve watched but I always wondered how they never talked over each other cause it happens in real life ALL the time.
