I recently smoked a brisket from Porter Road; made burnt ends from it as well...👍. Their dry-aged beef has great flavor. Compared to a wagyu brisket I did using the same seasoning, Porter Road's dry-aged brisket was better.

Great timing brother. I have an elk shank I'm getting into today, I'm braising some of it today, the lower shank, but I can't wait to see what you're up to here; the hard part for me is adjusting the temps for game meat.

I am able to find whole beef shank here in the Middle East more often than I can find brisket. I don't French it but do remove all the silver skin. If not whole, I will get it sliced about 2 inches thick then tie with butchers' string and make smoked osso buco. It needs a good braise after the smoke. I have been waiting for someone to put this on YT. Thanks for a great cook of an under rated cut of meat. lamb shank is great smoked as well.

Wow that is a cut I have never seen before. We have our own beef butchered but I have never been offered that option. I will have to ask about that, but meanwhile I went to Portar Road and was shocked to see that a 5# Shank was only $40 👍👍 Looks great Joe!

The reason we don't use beef shank more in BBQ is it is very prone to taste like liver. No one ever says that in these videos. If that's your thing cool, if not... yea... Looks cool doesn't taste great.
