The cooler method is the way to go. Used that a few times and will never smoke a brisket without it. Thanks

What brand and type of pellet did you use? My Maverick 850 can't smoke more than 6-7 hours before the burn pot blocks and smoke is forced back thru the pellet feed tube. And that's starting with a completely clean pot. I'm using quality pellets bought at the shop I bought my 850 at.

We used our Pitts & Spitts 100% Oak pellets. If you're using the brand of pellets we're thinking of, then those do create a lot of ash and require cleaning out the burn pot mid-cook. Even if not ours, try another high quality brand and see what happens. And ask your dealer if they have ours!
