I bought this smoker from Academy about four months ago and smoked my first brisket and turkeys for thanksgiving!! I haven't cooked anything on it since thanksgiving but I'm ready to get back at it. I love this smoker and appreciate the different videos like yours on this Old Country pit. This pit is perfect for briskets!! I give it five stars!!

It's definitely a good smoker as long as you get a good one. Unfortunately, I had to sell mine because I had too many smokers.

I assume you like your smoker, you make it look easy to hold temperatures. I've read review on this smoker from other people who said they/ve had problem with the temps. I think i"m going to buy one and use the same charcoal basket that you use, its time for me to upgrade a little. Thanks

I can't take all of the credit. This smoker really does hold whatever temps you choose. The basket does help with that as well as getting longer burn times and less fuel use. Just make sure you carefully inspect the smoker. Some are worse than others.

After 3 hours wrap the ribs for 2 hours with butter and brown sugar and a little apple juice, then unwrap and put back on the smoker with bbq sauce for 20 minutes to 1 hour. Around 160 degrees wrap the brisket, wait until the brisket reaches around 205 degrees so, take it out, wrap it in the towel put it in the cooler, let it rest for at least an hour to an hour and a half.

Never have I heard of anyone smoking with maple.

You can find maple wood chunks in most stores like walmart, Lowe's and home depot. I've seen the maple logs in academy sports, all for bbqing. I personally have access to maple trees that I can cut myself.
