These smoked chicken bombs on the pellet grill were absolutely delicious, and we'll definitely be making this smoked chicken bomb recipe again!
These chicken bombs on the grill start with smoking a block of cream cheese with a sprinkle of barbecue seasoning, and smoking whole jalapenos, so you're creating smoke flavor from the inside out instead of just smoking the outside of the chicken. Make a quick cheese mixture by adding shredded cheddar jack to the cream cheese, and stuff the smoked jalapenos. Then, roll the cheese-stuffed jalapenos up in boneless skinless chicken thighs, and wrap that in bacon.
When the chicken reached about 150-155 degrees F, we added some Mike's Hot Honey and 'Que That Barbecue Seasoning on top of each one and continued to cook until the chicken was about 185 degrees F. The combination of the black pepper in the Texas Rub, the sweetness from the honey, and the flavor from the barbecue seasoning was fantastic! Highly recommend!
