Nooooo! What did you do to Donald? Looks great. I bought a whole duck yesterday. Trying to smoke something new other the same ol ribs, brisket and pork butt and have been looking at recipes. This is the one I’m going to try. Thanks.

Can this process work in a regular oven set at the 275 temp. instead of on the smoker? My daughter wants to cook a Christmas duck but doesn't have a smoker & this recipe looks to be very simple & delicious. Bill B.

We cook or bake in the oven all the time --- and you can actually raise the temp to 350 reduce the time but use a thermometer to check temp, we lightly cover with aluminum foil. Then turn to 425 for about about 10-15 minutes with the foil removed and baste it... Comes out awesome.... And the skins is very crispy. Of course season your duck inside and out and we will put a fruit based stuffing inside (oranges will work as she said).

It's totally fine. I'd be worried if I were cooking in a restaurant setting or serving people other than my direct family members but I'm not.
