Easy way to make Kalua pork on any smoker. Banana leaves are the key to making this Islander dish.
Kiawe or Mesquite Wood chunks
4 lb pork shoulder, or Boston butt
2-3 tbsp Hawaiian sea salt or regular sea salt
Banana Leaves
Cabbage, chopped
1. Preheat smoker to 250-300°.
2. Rub the sea salt into the pork and wrap it in banana leaves.
3. Add Kiawe or Mesquite wood chunks and smoke until it has reached an internal temperature of 203°.
4. Remove the meat from the smoker and let it rest for 30-60 minutes before unwrapping and shredding. Discard any large chunks of fat before shredding.
5. Add, chopped cabbage, salt to taste, and cover for 5-10 minutes.
