Smoked Kielbasa on BORNIAK

There are many different ways to cook Polish sausages. My favorite method is to Smoke them.
Sausage is a general term, but kielbasa specifically means Polish sausage.
Sausages use a variety of meats, but Authentic Polish sausage uses only pork or a combination of pork and beef.
They are flavorful, and delicious. It’s a great addition to many dishes.
Whether you’re making Italian Polenta, sandwiches, or potato casserole, you’ll fall in love with this delectable meat.

Smoked Kielbasa
Preparation-Time:
Approx. 4 hours
For the Smoke
I used Alder chips
Ingredients:
12 fresh meat Kielbasa (I used two different types made from Polish butcher)
First Stage:
Set your smoker temperature at
55°C / 131°F.
For the sauce (red sauce)
200g Sour Cream
2 tablespoon of Ketchup
1/2 tablespoon of Paprika powder
coarse Salt
ground Black Pepper
3 Garlic cloves minced
2 teaspoon of Tabasco
For the sauce (white sauce)
200g Sour Cream
2 tablespoon of chopped Pickles
2 teaspoon of Dijon Mustard
2 teaspoon of Yellow Mustard
Ground Black Pepper
2 tablespoon of chopped Onions
coarse Salt
2 teaspoon of Tabasco
1 tablespoon of Chives
Set Up Meater Cook Temperature 67C/153F
Second Stage:
After 3 hours increase your smoker temperature at
135°C / 275°F.
After aprox. 4 hours of cooking
and you reached the meat internal temperature
of 67C/153F is ready.
