Bro the color on that pork loin was on point! Great advice you gave for the 140 internal temp as well. A lot of people still way over cook that pork and dry it out thinking they have to cook to 160 or so. Old Country is an awesome pit for people to cut their teeth on too. My first trailer pit was made by Old Country back before Alejandro started making the backyard models they sell in Academy now. You took me down memory lane with that one. Great job!!!

When what I remember Ash definitely burns differently. Just be mindful of air flow to make sure it burns clean. That was my issue when I used it, dirty bitter fire.

The pork loin came out great Eric, smart on searing it up and then pulled it at the right temp, otherwise it’s dry. You got quite the woodpile going on there, never tried ash but it sounds interesting. Looking good brother and keep on grillin!

Hi Eric. Shoot I tried to catch you on the live but missed it because I got caught up in my quest for baby back ribs. I went to Numerous stores and by evening I believe I secured enough. However I'm going to get my little chest freezer filled still this week for future cooks. I now know that in addition to getting my catering license I'm going to have to secure a reliable source of the meats I use. So for example I am very picky about the weights of my baby backs. I promise my customers that they are 3 lbs ( as low as 2.9 lb to 3.25 lbs). I charge a flat fee per rack so it can make it difficult currently to find them. Before the end of summer I will have it set up to buy directly from a hog processor for my requirements and a good price. Anyway I hope you had a great time and got some exposure for your channel. 😀👍

@@EricsBBQAndMORE Thought I should let you know Jack ( MrHocett1 ,fellow Dash viewer who lives in my home state) is going to help me tomorrow set up my Y Tube channel via cell. He explained that I need to have a short video to get it started so we will see about that but I'm planning on having something real in a few weeks. The game department is opening up our fishing so maybe my first real video will be salmon fishing with grilled or smoked salmon to finish it up. Hope I don't mess up getting out of the gates.😄🎣🔥🎣🔥🎣🍻

@@EricsBBQAndMORE Say I was wondering did you ever make a wind screen for your offset? I know I need to make one for my cookers. Being so close to the river means I'm living in the bottom of the river valley and that means moving air. 3 weeks ago the winds kicked up and next thing I knew the temperature jumped up with all that extra oxygen blasting in one of the vents. I got it under control but it was touch and go for a while. Last thing,I'm going to fire up the Pecos next week. How wide did you make your tuning plates. I need to do that mod still. Oh,as far as logo my channel be the same as my catering built. Little Baba's Smokehouse. It's focus will be farm and field to table via Smokehouse, BBQ, grilling and things like using campfire style Dutch Ovens. I will cover new ways to cook using old techniques. The field work will be fishing ( salmon, steelhead, trout,sturgeon, crabing,diging clams. Hunting mushrooms and small game perhaps. I believe it will have wide appeal. But first I need to do the first one right? 😁🔥🔥🔥

Looks like you may have fixed your wind problem with moving the smoker some,well done. You almost lost me during the wood splitting portion. I still haven't installed any tuning plates, I definitely need to get to that mod but in truth I have been having a blast with my WSM. I love how I can get it up to temp,put in the meat and walk away for several hours. I'll get back to the Pecos in about a month. I was happy to see you put that metal bucket under the fire door access. Was getting a little concerned about some Briquettes gowing out the door and onto you're wood deck. Overall looked good. @@EricsBBQAndMORE I'm curious if I told you that I ended up with 2 Pecos. Yup, Academy messed up but did right by me. The first Pecos they sent me was damaged. So they sent me a second one and would have the damaged one picked up when delivering the replacement smoker. Well that went according to plan but a little over a week later it was returned to my house instead of going back to Academy. After several weeks and phone calls to Academy I finally told them either get the damaged one out of here or give it to me free and clear. I reminded them that because of the freight damage I believe the best they would be able to sell it for would be about $100. They shipping cost plus tax is $150. Easy math for all of us and they apologized about all of their mistakes and said the damaged one was free and clear. So I have some metal work to do when I get the time but in the end will have two working and modified Pecos. And like you I will do some vids on the repair and modification work I intend to do. One mod I want to do is shorten the two legs then add big heavy duty casters so to make it easier to move about. Did you see Dashes and Alton's live vids at Alton's house? Damm that's a party I would have loved to attend. Looking forward to Dash talking about it in the near future. Take care.😀

@@EricsBBQAndMORE yes they are. The casters I'm thinking of attaching to the legs are at Harbor freight. They are air filled (I intend to fill them with a never flat product) and I believe that they will then be able to even go across lawns. This is important because besides starting to do catering events this year I'm going to finally do some competition bbq's. Harry got me hooked last year when he and Donna signed me up for a bbq competition class. So I want my Pecos to be able to be used at competitions also. Damm this is going to be a very busy year. Wish me luck.😄🍻

I did have a question though... as a average joe that grills using a charcoal grill I’ve always wondered what the best charcoal to use would be and I was wondering if you had any suggestions... I’ve always heard lump coal was pretty good so through the years that’s what I’ve stuck to. Figured I’d see what the master has to say! Thanks!

Fishin’ with Deej hey bud, thanks for watching! I have only used Kingsford blue bag, so I’m not the best one to ask. I’d like to try some different charcoals in the future. I only use charcoal to get a good base for my wood to burn clean so I’m not looking for any flavor from the charcoal. Hope that answers your question hope to see you someday soon!

Great Job!!! How would you list the mods from “Most Impressive/Effective” to “Least Impressive/Effective”. I’m Thinking about adding a valve and doing the water box on my Wrangler. Presently using Stick burning plate as tuning plate and Grilling/Searing as Stick burning support (easy swap). Thanks Also- what’s your propane set up to get coal started? Pretty sweet!!!

Conrad M hey, thanks for the comments, I’d have to say the most important one is the tuning plates and a close second is the water box. The moisture in my smoke and by having a large volume of hot water in the cook chamber it has the added benefit of holding the heat longer. My least effective mod was trying to seal the firebox...nothing I’ve tried will hold up to the temps and really I don’t think a little leaking of air on the lid matters. As for my propane torch it’s just a weed burner I picked up and I love it. Best of luck on your modifications!
