That smoke is a game changer makes rare and need rare look well done. It's just the smile. If anyone what's it to still look rare use cherry combination with hickory.😊

I smoked a Rib Roast slathered in an herb butter and it seemed to me that the smoke flavor wasn't able to penetrate through the butter into the meat. Was yours similar or great smoke flavor?

i figured you'd be using that compound butter for dipping. I'm sure it's delicious. maybe reduce it a little since it dripped into that water, maybe while the meat is resting. yum.

How did it taste? That lime was a great touch! It looks delicious but I did notice the "dirty" smoke when you firts put the roast in. Did you have all the vents open?

I smoked a 22lbs prime rib last year, 260 degrees for 6.75 hours. Turned out beautiful. Wish I could attach pictures.

This looks amazing and is not a critique at all, but why not use the compound butter after? Did the fat help it stay tender and not lose moisture? I'm curious what your thoughts are on it! It's perfectly cooked and makes me hungry!

I will be honest with you this looks fire one thing though based on time I usually just buy the St Elmo's seasoning. Let em marinate in the seasoning for at least 2 hours let them come to room temperature almost and then grill them

Letd be honest. Everyone making prime rib medium rare... its almost always rare. 120f is not medium rare. So no ome ever knows wth they are talkin bout.

@@louisle9162 You are wrong. Rare denotes a cool red center. A prime rib would never have a cool red center. Prime Rib is traditionally med rare to medium.

Butter run-off asked about by quite a few people; don't throw it out. Use to make Au Jus - any remaining water will cook off when you reduce the sauce / gravy. Another point - no real reason to debate level of doneness; if you like it rawer, cook it less. If you like it more done, cook it more. You cook it the way you like it.

Yeah, not going to get much smoke flavor through the fat of the butter since 1, it creates a non permeable layer, and 2 the fat of the butter will absorb most of the smoke. You have a smokey butter basted roast there as evidenced by the lack of smoke ring. Worst case your smoke temp was too high, marked the butter and made that useless, then you just got smoked meat.
