And I personally pour the sauce on then brush or rub my sauce on , it’s more flavor per bite

Don't cut them while hot. Smoke at 225F to 250F. Smoke 2 hrs. Wrap in foil meat side down with honey, apple juice, brown sugar. Back in smoker until internal temp reaches 205F. Unwrap, sauce and let glaze set in smoker for 10-15 mins.

So you want half of the smoke flavor and want to boil them? Why not use a a crockpot, at that point you’re wasting pellets.

2-1-.5 method seems to work well for me. Base seasoning is salt, pepper, garlic blend, then top seasoning whatever you prefer. I like using a brown sugar base seasoning. 275° directly on the rack for 2 hours, wrap with wrap meat side down with 4-5 tbs size slices of butter, brown sugar, and honey for 1 hour or until meat is about 208-210 internal for fall off the bone. 30 minutes back directly on the rack for glaze

185F is the key. Any more temp and the ribs will be pudding in that amount of time. Try 3 hrs at 185F first, then wrap for 30 min, unwrap then back on a 225F grill until the ribs hit 195/200F internal.
