This is an excellent recipe for smoking trout. It's often referred to as "fish candy". Can be eaten hot, cold, or make a dip from it. Even if you don't like fish you'll love this.
Wet brine ingredients:
8 cups water.
1/3 cup coarse kosher salt
1/2 cup light brown sugar
2 Tbsp soy sauce
1 Tbsp sriracha sauce
1 Tbsp ground black pepper
1 Tbsp paprika
1 Tsp tyme
1/2 Tsp garlic powder
