Smoked Whole Duck.... Whole Duck Smoked on the Weber Kettle
Here's an easy little bird recipe to get you through the holidays.
Pick you in farm raised duck from the five and dime. Poke some holes in the skin and apply a little salt. Toss it in the fridge over night to brine a little.
When ready to cook, stuff it with some goodness and apply an awesome rub tobthe outside. Cook indirect at about 300° until that duck reaches an internal of 155° in the breast. Let it rest for about 20 minutes, them enjoy.
