My son is vice-president for a national bank chain, he mentors youth, and is pastor of his church. He does grill, but doesn't have time to smoke meat. His birthday is here in July, and what I do as a gift, is BBQ beef ribs for him (he doesn't eat pork for religious reasons). I lived in Columbus OH from '89 - 2010 and there was an actual butcher shop where I would buy beef ribs, and even after I moved an hour away, I would still (like you chef) drive to buy meats..but sadly, two years ago the shop closed..I can only find small beef ribs here, not much meat on them. And when I moved back here, I didn't have a yard anymore. I would first cook the beef ribs in my Instant Pot, and finish in the stove under the broiler..My son was still very happy with the ribs. Now that I've bought a Pit Barrel Smoker, I'm going to do a whole brisket for him next weekend..I pray the weather holds out, our patio isn't covered...I have the same Masterbuilt Electric smoker as you..The patio outlet is on the same circuit has the kitchen microwave and coffee maker..I didn't know this ,until I first had two chickens in the smoker, and my wife used the microwave, that kicked out the breaker..which also shut off the Masterbuilt. I had wireless meat probes in the chickens, and in the smoker, when I noticed the temperature was dropping. It took me a minute to realize what happened. My electrician friend is coming one weekend to split the wiring so that the patio outlet has its own breaker..My youngest daughter catering business is really doing well, I'm going to start helping her by smoking chickens in the Masterbuilt. I can smoke/roast 10 chickens at a time. I have a vacuum sealer, I will cut them up and seal for her, so that all she has to do is reheat..

I learn something new with each video. Great job, great presentation. I would recommend staying out of the heat outside, but apparently, you have it figured out. @bbqsouthernstyle Chef, is there a rule of thumb concerning how much charcoal/ wood to use when cooking a brisket, etc.. with the direct method, so I can avoid having to add more as it cooks. I noticed you did such in your brisket video, and feel it would be a game changer later this week. Than you, sir. Have a great day!
