This is the most impressive job I have ever seen. The knife is incredible sharp that leave no rooms for error. King mackerel is an oily fish and very good eating fish fried, stew, BBQ or salted dried then grilled and served with a piece of lemon. I enjoy the video. Thank you!

This is a sustainable fishery, line caught by hand. Spanish Mackerel is high in Omega 3 and a very versatile fish to cook with. We substitute for Red meat in various meals such as Carbonara, Bolognaise, Sweet and Sour, currys and stir frys. This fishery is our livelyhood and many others within Australia. In the southern hemisphere, these fish are mostly known as spanish mack and in the north hemisphere, such as in the U.S., we call them king mackerel or kings. In the southern U.S., they're known as kingfish. On the eastern seaboard, the kingfish alludes to another species entirely. The whiting(kingfish), is made up of two species: Northern kingfish and the southern kingfish.The southern variety has two sub-species, one in the gulf, one in bays. The gulf fish is silver white, the bay fish, brown.

I also use victorinox ,a worn-down 20" and I always say "if the knife's sharp, that's 90% of the work done,speed comes with experience".

These are Spanish Mackerel (Scomberomorus maculatus) identifiable by the distinct blue coloring of the DEAD fish. King Mackerel (Scomberomorus cavalla) is void of color almost immediately after death. But, they are incredibly big spanish macks. Could possibly be a Cero Mackerel, usually bigger than the Spanish and smaller than the King. BUT, point is, it is not the same fish just being called different names in different parts of the world. Proper ID is easy. The Cero Mack has yellowish markings

bro first of all great video. secondly, my family have been commercial mackerel fishermen for over 30 years and i would regard my grandfather as one of the best filleters in the country. your not too far behind him dude, got some serious knife skills there. i grew up fishing and filleting and there is no other job like it = awesome. there will always be some fucktard comment on the amount of waste on a fish.

we call those king macks here in florida spanish are a weee bit smaller but id have to say they are my favorite fish and easiest fish to filet because of their tiny ribs any knife cuts right through them and best of all you dont have to skin them (i eat the skin it taste great)

Samuel Baker Here in Australia these are Spanish Mackerel (scomberomorus Commerson) King mackerel are a different species (scomberomorus Cavalla)

Probably already found this out but anyway... It acts as a handle to lift the fillet up to cut beneath it and release it from the backbone. These macks have quite soft flesh so trying to hold it another way can damage it.

there are Spanish mackerel in the USA too, but those are known as kingfish here. They look really similar tho.

JS DB actually, steel holds an edge much better thsn titanium. A good knife uses a high quality steel, with a good heat treatment. That means hardening and tempering a blade to keep an edge to the best of its ability. (fillet knives usually use stainless since theyre around moisture all the time) different grades of steel preform different tasks better, and often times more premium steel costs much more. S35vn is one of the best over all steels in my opinion, when treated correctly. It keeps an edge longer, sharpens easier, and is more resilient than a large majority of steel out there. Titanium is strong, but doesnt hsve the same hardening and tempering ability as steel. (even high grade titanium such as 6al4v)

All the people saying it's a Kingfish are idiots. This is a Spanish Mackerel every day of the week. A Kingfish (seriola lalandi) and a Spanish Mackerel (scomberomorus commerson) are two completely different species. This fish was caught in Australia so call them by their proper names instead of sounding like you think that wherever you live is the only place that exists.

Sorry champ but I think you're missing the point I made. Here in Australia where this fish was caught, this species is called a Spanish Mackerel and they grow in excess of 40kg here. A Yellowtail Kingfish here in Aus (seriola lalandi) is the same as what's called a Yellowtail Amberjack in the US. Spanish Mackerel (Scomberomorus commerson) and the fish you speak of called King Mackerel (Scomberomorus cavalla) are different species. I have provided the correct scientific names for you which suggests that I have indeed looked it up. In fact, I'm the one who didn't have to.
