INGREDIENTS:
2 eggs
22g unsalted butter
10g low-gluten flour
80ml milk
30g sugar
1 tsp vanilla extract
1 tsp powdered sugar
PRO TIPS:
- Don't skip coating the mugs, as this is one of the most important steps. If you do, the batter may stick and the soufflé won't rise properly
- The baking time is different for different sizes of molds but should not be too long. If overbaked, the fluffy and moist texture will disappear and it will look like a cake
- Soufflés need to be served immediately because they rise so much in the oven and when a hot soufflé hits the cooler air, it deflates
