Soft cheesecake - 🥳 A fluffy dessert which will make everyone happy every day! 🥳
INGREDIENTS
spreadable cheese 160 grams
butter 20 grams
milk 50 milliliters
flour 00 40 grams
egg yolks 4
egg whites 4
lemon juice 1/2 teaspoon
sugar 80 grams
To decorate
whipped cream 100 grams
candied cherries to taste
chopped hazelnuts to taste
dark chocolate to taste
Pour water into a saucepan and bring it to a boil.
Remove the saucepan from the flame and place a bowl containing the spreadable cheese and soft butter at room temperature on top of it, mix the ingredients then add the milk and mix it with a whisk, add the sifted flour and mix it all using a whisk .
Let it cool down then add the egg yolks.
Use an electric whisk to whip the egg whites until stiff, after a few seconds - when the egg whites begin to form many bubbles - add about 1 spoonful of the available sugar and continue beating, after a few seconds add another spoonful of sugar, continue beating the egg whites with the whips then add the remaining sugar and finish the process until you get a firm mix.
Add the egg whites to the yolk mixture, start by adding a few ladles to soften it, then add the rest with circular movements from the bottom to the top.
Pour the mixture into a 16 cm diameter mold with a disc of parchment paper on the base. then place it inside a baking tray with edges and pour boiling water into the pan to cover the mold by about 1 centimeter.
Place into a static oven at 160 °C for 20 minutes, then set the temperature to 110 °C, leave the oven open for a few seconds to lower the temperature, close and continue cooking for 60 minutes.
Remove the cake from the oven, let it cool down, then take it out of the mold, once it is completely cold, decorate it with whipped cream, dark chocolate flakes , some candied cherries and chopped hazelnuts.
