The recipe of this soup goes back as far as 15th century, and was mostly used by village people.
It is usually quite spicy, but I will show you my non-spicy version.
For Beef Stock:
2-3 lbs lean meat
1 carrot
1 celery stock
1 onion
dry spices
Make beef stock as you would normally as a soup base.
For Solyanka:
1 large onion(diced into cubes)
1 large carrot( grated)
1 bunch of parsley
1 can diced tomatoes(blended into puree)
1 can V-8 or tomato juice
Different kinds of smoked meats: It could be bologna , smoked pork shoulder, smoked sausages, anything you like. It has to be a verity in taste and texture.
4 pickles(in brine)
¼ brine reserved
10-15 olives
1 lemon( to garnish)
fresh parsley( to garnish)
sour cream(optional) for serving
Spices: 1 tsp Paprika, 1 tsp Coriander, ½ tsp black pepper, couple shakes of Cayenne pepper, salt to taste.
Saute vegetables: onions and carrots in 2 tbsp of cooking oil, add diced pickles, add tomato puree.
Add saute to beef stock when its ready.
Add V-8.
Reserve the meat and cut into cubes.
Cut all meat and add to soup.
Add spices and brine and simmer for 30 minutes.
Add olives and parsley, simmer for just 5 minutes and your soup is done!
You can enjoy it with slice of lemon and spoon of sour cream.
