Today I’m in Oaxaca to learn how to make sopa de guías, a soup made with local herbs, courgette and courgette flowers. We also prepared pickled onions and roasted chillies which were delicious too and helped bring the dish together. Oaxacas food is so varied and this is proof Mexican food can be healthy too.
Usually when people come to visit Oaxaca, mole is one of the main attractions or grilled meats or tlayudas, however, this sopa de guías really shines and is delicious.
I’ve been learning some recipes from a lady called Vicky who gives cooking classes in Oaxaca and if you want a class with her, search her page called Cocina PreHispanica, she’s awesome.
My time is almost done in Oaxaca, for now anyway. It’s been incredible to learn so much and have access to the incredible produce in the markets here. I think I may have also gained a few kilos round the waist but it was most definitely worth it I think!
As I always say, when you come to visit Mexico or Oaxaca, try the local cuisine, don’t just play it safe. Be adventurous because the food here really is worth it and take a cooking class too, it’ll come in handy in the future!
I’m still deciding where to go after Oaxaca, maybe to the coast or I may venture more inland. I’ll let the Mexican food guide my travels!
